Broccoli pasta salad

Creamy, very tasty and satisfying, this broccoli pasta salad is my favorite pasta salad. Also this salad is pretty easy to prepare and it may be considered a meal.

I love creamy salads so I added mayonnaise to my salad. If you’re on a diet, you may use my yogurt salad dressing or use half mayo and half yogurt.

As regarding the mayo, homemade mayo or store bought mayo, they are both a great choice.

Broccoli goes great with with smoked ham, bacon or prosciutto crudo. I chose prosciutto crudo because is very tasty and flavorful and it doesn’t have to be fried. If you want to use bacon, you should fry it on both sides until golden brown.

Now I want to give you a few tips about how to cook broccoli.

You may steam or blanch the broccoli. Steaming is very easy, so let’s talk about blanching.

Blanching is a cooking technique used especially for green veggies. The veggies are dropped in boiling water, cooked for a very short time then transferred to a pot with very cold water and ice cubes to stop the cooking process. Blanching the veggies helps reduce quality loss over time but also to preserve color, flavor, and nutritional value.

So, for bleaching the broccoli you’ll need 2 pots: one with cold water and ice cubes, and another one with boiling water. Drop the broccoli florets into the pot with boiling water, cook for about 3 minutes then transfer to the pot with cold water and ice. Allow to cool for a few minutes then drain.

You may serve this delicious broccoli pasta salad as a meal or as a starter.

Ingredients for Broccoli pasta salad

– 300 gr (10.58 oz) pasta

– 1 kg (2.20 lbs) broccoli 

– 1 bunch green onions

– 200 gr (7.05 oz) prosciutto crudo

– 200 gr (7.05 oz) black olives (stoned)

– 500 gr (17.63 oz) mayonnaise

– salt, pepper and lemon juice or white vinegar to taste

How to make broccoli pasta salad

Remove the broccoli florets with a knife. Rinse and set aside.Prepare a pot with very cold water and ice cubes. Set aside. Fill a another pot with water, add a pinch of salt and bring to a boil. Drop the broccoli florets into the boiling water and cook for 3-4 minutes or until tender. Drain the broccoli and transfer to the pot with water and ice. Allow to cool for a few minutes and drain. Set aside.

Cook the pasta according to the instructions from the package. Drain, rinse with cold water and allow to completely cool into the colander. 

How to assemble the broccoli pasta salad

Use a large bowl to stir together broccoli, pasta, prosciutto crudo, olives, green onions cut into rings and mayonnaise. Season with salt and pepper and add lemon juice or white vinegar to taste.

Spoon into bowls and serve.
