Peaches. Again :). I promise, this is the last peach recipe for this summer! It’s almost fall, pies season. Oh, I can’t wait to treat myself with a piece of apple pie or pumpkin pie. By the way, which one do you prefer, apple pie or pumpkin pie? For me it’s very difficult to decide so I take a piece of each :).
But I was talking about peaches and sponge cake. This is such a great combo, don’t you think? The cake is sweet, vanilla flavored, and the peaches are so flavorful, juicy and a little bit sourish.
This peach sponge cake is also very quick and easy to prepare and it calls for simple and budget friendly ingredients.

To prepare this delicious cake you should start by making the batter. Mix the whites, add the sugar, then the yolks and the vanilla essence. Fold in the flour and voila: your batter us ready! Pour the batter into the baking pan lined with parchment paper, top with diced peaches and bake. Then allow to cool, sprinkle some powdered sugar, cut into squares and serve. See, it’s quick and easy!
If you like cocoa, you can replace 2 tablespoons of flour with 2 tablespoons of cocoa and make a chocolate sponge cake topped with peaches (chocolate sponge cake full recipe here).

Ingredients for peach sponge cake ( for a 32/35 cm – 12.6/13.7 inches baking pan)
– 12 eggs
– 300 gr (1 1/2 cup) granulated sugar
– 300 gr (2 1/3 cups and 1 tablespoon) flour, sifted
– a pinch of salt
– vanilla essence
– 3-4 peaches
– powdered sugar for dusting

How to make peach sponge cake
Preheat the oven to 170ºC (350ºF).
Line the the baking pan with parchment paper.
Separate the yolks from whites.
Place the whites into a large mixing bowl. Add a pinch of salt. Mix on high speed until stiff peaks form.
Add the sugar in 2-3 steps and continue to mix on high speed until the sugar is completely dissolved. You should obtain a very firm and glossy meringue.
Add the vanilla essence and the egg yolks, one by one. Briefly mix after each egg yolk just until incorporated.
Gradually stir in the flour
Pour the prepared batter into the baking pan and level it with a spatula.
Top with diced peaches.
Place the baking pan into the preheated oven and bake at 170ºC (350ºF) for about 25-30 minutes (or until a toothpick inserted in the center comes out clean).
Transfer the cake to wire racks and allow to cool completely
Sprinkle powdered sugar, cut into squares and serve.
