This black beast cake is the best chocolate cake! It’s pure chocolate! It’s so rich, creamy and flavorful and yet incredibly easy to make :). I saw this recipe on Liz blog and I said to myself: “hey, this cake has such a funny name and it looks sooo good!” So I put it on my to do list.

Why is this cake called the “black beast” or La Bête Noire? I really have no idea :). I’ve made some research on google and Wikipedia but I didn’t have any answer to this question. Maybe it’s because the main ingredient for this cake is dark chocolate. Anyway, it’s not so important where the name comes from, the taste is what really matters. And the taste of this cake is absolutely divine, you definitely have to give it a try!

This decadent chocolate cake is also very easy to prepare and it calls for simple ingredients like sugar, dark chocolate, butter and eggs. The cake is topped with a ganache layer made with heavy cream and dark chocolate.

To prepare this ultimate chocolate cake you start by making a syrup. Then melt the chocolate and the butter and stir in the syrup. Allow to cool for a few minutes then incorporate the eggs. See how easy this is?

The cake is baked in a water bath, like a cheesecake. This is the best method to bake a flourless chocolate cake because keeps the cake creamy and moist.

I’ve made this absolutely delicious chocolate cake for my youngest son’s 7th birthday. He is a huge fan of chocolate and when  ask him what kind of cake he wants the answer is the same: chocolate cake 🙂

How to make the black beast – flourless cake

You should start by preparing the pan. Butter the sides and line the bottom of the pan with parchment paper. Wrap 2-3 layers of aluminum foil around the outside of the pan. Set aside.

Stir together water and sugar into a small pot. Place the pot over medium-high heat and bring to a boil. Continue to simmer for about 5 minutes. Remove from heat and allow to cool.

Meanwhile melt chocolate and butter (in the microwave or water bath).

Pour the syrup over the melted chocolate and stir to combine. If the mixture is hot, allow to cool for a few minutes.

Add the eggs and mix to incorporate.

Pour the batter into the prepared pan.

Place the springform pan into a large pan and fill it halfway with water.

Place both pans into the preheated oven and bake at 180 ºC (350ºF) for about 50 minutes or until the center of the cake is set. Remove the springform pan from the water pan. Let the cake cool in the pan.

Meanwhile prepare the ganache.

Use a heatproof bowl to combine chocolate and heavy cream. Melt in the microwave or water bath.

Pour ganache over the cake. If necessary shake the pan to distribute the chocolate evenly.

Refrigerate the cake for a few hours.

Serve this delicious chocolate cake topped with fresh fruits or sprinkles. Vanilla sauce would also be a great choice 🙂

Enjoy!
