Sheet pan chicken and potatoes – video recipe

This sheet pan chicken and potatoes is my favorite one pan meal, a great combo of tender potatoes and chicken wings roasted to a golden brown perfection. This is my go-to recipe for quick and easy dinner because it calls for simple ingredients and less work. And let’s be honest, everybody likes potatoes and chicken wings, right? You can’t go wrong with such a great combo, even if you have to feed 2 picky children 🙂

What we need

To prepare this delicious one pan meal I used chicken wings because they turn out great in the oven with a delicious crispy skin but tender and juicy on the inside. Also, you can use chicken legs or thighs or skin-on chicken breast. The skin is important because keeps the meet tender and juicy. So, you shouldn’t discard the skin before baking.

As regarding the veggies, I used potatoes but you can also add carrots, mushrooms, red bell pepper and so on. Also, you can serve this delicious dish as is or along with your favorite salad.

This sheet pan chicken and potatoes is also incredibly easy to prepare. All you have to do is to place all the ingredients into a sheet pan and bake. I bake my sheet pan chicken and potatoes in 2 steps: first I cover the pan with aluminum foil and bake for about 45 minutes. Aluminum foil keeps the moisture in and the veggies will be very tender. Then I remove the foil and continue to bake until everything is crispy and golden brown 🙂 This second bake takes about 30-45 minutes, depends on how crispy and brown you like the chicken.

Ingredients

– 2 kg (4.4 lbs) potatoes

– 8-10 chicken wings

– 3-4 tablespoons vegetable oil

– 1/2 teaspoon hot paprika

– 1/2 teaspoon ground pepper

– 1 teaspoon dried thyme

– 1 teaspoon salt (or to taste)

How to make sheet pan chicken and potatoes

Peel and rinse the potatoes. Cut each potato into 4-6-8 even-sized pieces (depend on their size). Transfer the potatoes to a large bowl. Then add vegetable oil, salt and hot paprika and stir.

Transfer the potatoes to the sheet pan. Place the chicken wings on top. Sprinkle salt, ground pepper and dried thyme. Cover the baking pan with aluminum foil.

Baking sheet pan chicken and potatoes

Place the baking pan into the preheated oven and bake at 180ºC (356Fº) for about 45 minutes.

Remove the aluminum foil and continue to bake for another 30-45 minutes or until golden brown.

Serve warm, garnished with fresh parsley.
