This red bell pepper and cheese stuffed meatloaf is definitely the best meatloaf! It’s incredibly flavored and juicy, and it looks amazing! Served warm or cold, it makes the perfect choice for a family dinner or for parties.
Also, making this stuffed meatloaf is a piece of cake. Just combine all the ingredients, roll out, sprinkle cheese and dice bell pepper on top and roll up. Then transfer to the loaf pan and bake.
What meat should I use to make meatloaf?
The answer is easy: you should use lean meat. I prefer to use lean pork but or a mixture of beef and pork lean beef or chicken would work great too. I recommend you to buy meat and mince it at home. If you don’t have a mincing machine, place diced meat into a food processor.
Be generous with spices and fresh herbs! You can use ground black pepper, paprika, ground cumin, fresh parsley and other spices to add flavor to your meatloaf.
You can serve this delicious red bell pepper and cheese stuffed meatloaf warm or cold, along with your favorite side dish or salad. It goes great with mashed potatoes, with Greek lemon potatoes, with bulgur pilaf or with Mexican veggies and couscous salad.

Ingredients for a 30/11.5cm (11.8-4.5 inches) loaf pan:
– 700 gr (25 ounces) minced pork
– 100 gr (3.5 ounces) cheese
– 1 red bell pepper
– 1 bunch fresh parsley
– 4-5 garlic cloves
– salt and pepper to taste
– 1/3 teaspoon dried thyme
– 1 teaspoon ground cumin
– breadcrumbs to coat the meatloaf

How to make red bell pepper and cheese stuffed meatloaf
Use a bowl to combine minced meat, crushed garlic, fresh parsley, salt, ground pepper, dried thyme and ground cumin.
Place the prepared meat between 2 plastic sheets. Use a rolling to roll out the meat. Shape into a rectangle. Sprinkle on top grated cheese and diced red bell pepper.
Roll up tight, starting from one long edge to another.
Place breadcrumbs onto a platter. Remove the meat from the plastic wrap and coat with breadcrumbs. Transfer to the loaf pan (buttered and coated with breadcrumbs)
Place the meatloaf into the preheated oven and bake for about 40-50 minutes (or until golden brown on top).
Let cool for about 15 minutes, then slice.
Serve warm, along with your favorite side dish, or cold, as an appetizer.
