    Homemade pumpkin puree

Make pumpkin puree from scratch is incredibly easy and all you need is pumpkin :). I prefer homemade food because is fresh, tasty and healthy. It’s true, I don’t have time to make pumpkin puree every time I need it, but, when I have enough time, I prefer to make it myself rather than to buy it from the store. You have the possibility to prepare a large amount of pumpkin puree and keep it into the refrigerator for a few days – up to one week, or into the freezer for up to 3 months. To prepare pumpkin puree you can use any kind of pumpkin but there will…

    Rice and mushroom salad

Rice is a very nourishing grain and I like to include it in my diet. And the easiest way to do that is to make a salad, right? In Romania we have a dish called “pilaf” made from rice, vegetables and, sometimes, chicken. It’s very tasty, but I prefer rice salad because I can also add fresh vegetables like cucumbers, tomatoes, onions and herbs. There’s much more flavor. Now I want to share with you my latest creation: rice and mushroom salad. It’s very tasty and flavorful and you have to give it a try! To prepare this salad I used fresh button mushrooms but you can use your favorite…

    Baked cauliflower fritters (vegan)

Flavorful, juicy and very nourishing, these baked cauliflower fritters make the perfect choice for a healthy snack or for a vegan meal. These cauliflower fritters are very easy to make but not so quick because you have to cook the potatoes and the cauliflower. When you cook the potatoes you should leave the skins on, otherwise they will absorb too much water. To prepare the cauliflower fritters you have to mash the potatoes (like for mashed potatoes). Then add finely chopped cauliflower, finely chopped onion, crushed garlic and chopped dill. Combine all the ingredients and add breadcrumbs to thicken the mixture. You should obtain a quite hard mixture. Then roll…

    Mexican veggies potato salad

Flavorful, colorful and very filling, this Mexican veggie potato salad makes the perfect choice for a vegan meal but goes well also as a side dish. I have to tell you that this salad is my husband’s creation. My intention was to prepare a potato and beetroot salad, but his reaction was: “beetroot again?!?! Can you, please, keep the beetroot for your self and make for me another salad with Mexican mix vegetables?” So, I postponed my potato and beetroot salad for the next week and I made a delicious Mexican veggie potato salad. This salad is also easy to make. Mexican mix veggies are already chopped and all you…

    Mushroom stew with olives

How can I describe this dish? It’s absolutely delicious! I love mushroom stew, but I always had the feeling that something is missing. I’ve tried many combos: mushroom stew with chicken or with pork, creamy mushrooms or creamy mushrooms with chicken. These dishes were all good and tasty but this mushroom stew with olives is definitely a hit! You must give it a try! This mushroom stew with olives is also quick and incredibly easy to make. The most “difficult” part is to slice the mushrooms :). Then you have to sauté the onion, toss in the slice mushrooms and in less than 30 minutes you can set the table. Meanwhile…

    Greek lemon potatoes

Very soft and tender on the inside but a little crispy on the outside, full of Mediterranean flavors, these Greek lemon potatoes are the best roasted potatoes. And you have to trust me because I’ve tested many recipes! :). But why are these Greek lemon potatoes so incredibly delicious? Because they are soaked into a delicious sauce, like a marinade, and baked to perfection. The sauce is made from lemon juice, olive oil and water and seasoned with garlic, salt, pepper and dried oregano. It’s a symphony of flavors! The Greek lemon potatoes are absolutely delicious and flavorful but I have to tell you that they need more salt than…
