    Pickled cauliflower – video recipe

    October 26, 2020 /

Crispy tangy but a little sweets, this pickled cauliflower makes the perfect garnish for grilled or roasted meat. These homemade pickles are also very easy to make with a handful of budget friendly ingredients. With only one large cauliflower head you can make about 4 jars of pickled cauliflower. I also add carrots and horseradish but red bell peppers would also be a great idea. If You add some beetroot you’ll get pink pickled cauliflower 😁 Tips for crispy pickled cauliflower 1. Don’t cook the cauliflower! Just pour simmering brine into jars, over the cauliflower. In about 1 week the cauliflower will be ready: crispy, with a perfectly balanced taste. 2.…

Homemade oat milk – video recipe

    July 19, 2020 /

Quick and easy to make, creamy, with a lovely neutral oaty taste, this homemade oat milk makes a great option for people with allergies or lactose intolerance. It’s naturally free of lactose, nuts, soy, and gluten and it’s full of nutrients. Oat milk makes the best vegan milk substitute, it’s great even for those people who have multiple allergies and it’s budget friendly. Oat milk became very popular because it’s free of allergens and it contains beta-glucans — a soluble fiber that may offer heart health benefits. You can find oat milk in grocery stores but you can also make your own homemade oat milk, from scratch. It’s incredibly easy! This raw-vegan milk recipe…

Homemade Doritos from scratch. Homemade Nacho chips

    July 8, 2020 /

Crispy and seasoned with our favored spices, these homemade Doritos from scratch(homemade nacho chips) are the best homemade snack ever! And the great part is that all you need to prepare these delicious homemade crackers is cornmeal, flour, vegetable oil and water, plus your favorite spices. And, as a plus, your kids will be very interested about the whole process of making Doritos and they will give you a hand. My toddler loves Doritos more than any other snack. Every time we go together for groceries we get home with at least one bag of Doritos. But these store bought chips aren’t the healthiest snack, especially for kids. So, when…

    Rice salad

    July 26, 2018 /

Rice salad is definitely my favorite salad. It’s super delicious, healthy, very nourishing and incredibly easy to prepare. I can always find some rice in my kitchen and a few veggies an I can make a delicious salad in less than 30 minutes. Meanwhile I can grill some meat and here’s our lunch! Quick and simple. See, this is why rice salad is my favorite.I remember my first rice salad: it was made with rice, black olives and red bell pepper, all the ingredients my husband had in the kitchen, besides meat, of course :). This rice salad is a basic recipe. Starting from this recipe you may prepare great…

    Lentil zucchini salad

    June 26, 2018 /

Very tasty, nourishing and satisfying, this lentil zucchini salad became one of my favorite salads. It’s absolutely delicious and easy to prepare with a handful ingredients. For this salad I cooked lentils for the first time. I mean I ate lentils many times but I never cooked them. My mom did :). So, I was really surprised how incredible easy is to cook lentils. I use to cook dried beans which must be soaked over night and cooked for hours. As regarding the lentils, you don’t have to soak them and they need to be cooked for about 20-30 minutes (until cooked through). And, as a plus, lentils are much…

    Homemade falafel recipe

    March 23, 2018 /

Crispy on the outside but tender on the inside, packed with flavor and yet very easy to prepare, these falafel became my favorite vegan dish. Falafel is a deep-fried ball or patty made from ground chickpeas, onions, garlic and spices. It’s very tasty and nourishing and, if you taste falafel for the first time, you won’t be able to say that there’s no meat :). I actually find these vegan chickpeas patties more satisfying than meat patties. Falafel is a traditional Middle Eastern food but today it is famous all over the world as street food. It’s very easy to prepare falafel but you need a food processor and dried…

    Homemade pumpkin puree

    November 13, 2017 /

Make pumpkin puree from scratch is incredibly easy and all you need is pumpkin :). I prefer homemade food because is fresh, tasty and healthy. It’s true, I don’t have time to make pumpkin puree every time I need it, but, when I have enough time, I prefer to make it myself rather than to buy it from the store. You have the possibility to prepare a large amount of pumpkin puree and keep it into the refrigerator for a few days – up to one week, or into the freezer for up to 3 months. To prepare pumpkin puree you can use any kind of pumpkin but there will…

    Rice and mushroom salad

    November 1, 2017 /

Rice is a very nourishing grain and I like to include it in my diet. And the easiest way to do that is to make a salad, right? In Romania we have a dish called “pilaf” made from rice, vegetables and, sometimes, chicken. It’s very tasty, but I prefer rice salad because I can also add fresh vegetables like cucumbers, tomatoes, onions and herbs. There’s much more flavor. Now I want to share with you my latest creation: rice and mushroom salad. It’s very tasty and flavorful and you have to give it a try! To prepare this salad I used fresh button mushrooms but you can use your favorite…

    Baked cauliflower fritters (vegan)

    October 30, 2017 /

Flavorful, juicy and very nourishing, these baked cauliflower fritters make the perfect choice for a healthy snack or for a vegan meal. These cauliflower fritters are very easy to make but not so quick because you have to cook the potatoes and the cauliflower. When you cook the potatoes you should leave the skins on, otherwise they will absorb too much water. To prepare the cauliflower fritters you have to mash the potatoes (like for mashed potatoes). Then add finely chopped cauliflower, finely chopped onion, crushed garlic and chopped dill. Combine all the ingredients and add breadcrumbs to thicken the mixture. You should obtain a quite hard mixture. Then roll…
