Zucchini contain a big amount of water and you should sprinkle them with salt and let rest for about 30 minutes to leave water.
Dredge zucchini slices through the flour, dip in the egg, coat with breadcrumbs and fry on both sides until golden brown.
You can serve these delicious fried zucchini warm or cold, as a snack, as an appetizer or even as a main dish, with salad.

How to make fried zucchini
Start by peeling the zucchini. Wash and slice them into 8mm-1cm thick slices. Place zucchini slices into a colander, sprinkle with salt and let rest for about 30 minutes. In this resting time zucchini will leave water. If you skip this step, zucchini will leave water while frying and you will obtain mushy fried zucchini.
Place flour and breadcrumbs into bowls. Beat the eggs into a bowl.
Dredge each zucchini slice through flour, dip in the egg and coat with breadcrumbs.
Prepare all the zucchini slices before start frying them.
Pour enough oil into a large frying pan to reach a depth of about 3cm. Heat the oil over medium heat.
When the oil is hot, fry the zucchini slices on both sides until golden brown. Work in batches.
Use a slotted spoon to transfer the fried zucchini onto paper towels.
Serve fried zucchini warm or cold. You really have to try them with yogurt garlic sauce!
