I’m very proud to share with you this gorgeous recipe: Romanian cheese doughnuts. It’s a traditional dessert, absolutely delicious, quick and easy to make with a handful of ingredients.
Romanian cheese doughnuts are fluffy doughnuts made with cheese, deep fried and served with cream and jam. They are very popular in Romania, you can find them in every restaurant’s menu and each housewife knows how to prepare this recipe.
In Romania we prepare these doughnuts with “cow cheese – branza de vaci”. I’ve made a research on internet and the quark cheese seems to be an equivalent of our “cow cheese”.
I’ve also seen cheese doughnuts recipes made with cottage cheese or ricotta cheese. In those cases there might be necessary to adjust the amount of flour because these are types of cheese that contain a larger amount of water.
The cheese doughnuts dough must be soft and a bit sticky but “workable”. If the dough is too sticky, add a little more flour.
Serve the Romanian cheese doughnuts warm, topped with cream and jam.
Ingredients for Romanian cheese doughnuts (6-8 pieces):
– 300 gr (10.5 oz) curd cheese or quark cheese (you can also use cottage cheese or ricotta cheese)
– 250 gr (2 cups) flour
– 2 eggs
– 80 gr (1/2 cup minus 1 tablespoon) sugar
– 1 teaspoon baking powder
– zest from 1 lemon or orange
– a pinch of salt
– vanilla extract
You also need:
– vegetable oil to fry the cheese doughnuts
– cream (sour cream or heavy cream) and jam for serving
How to make Romanian cheese doughnuts
Use a medium bowl to combine flour, baking powder and a pinch of salt. Set aside.
Use a large bowl to combine the cheese, eggs, sugar, lemon zest and vanilla extract.
Add the flour, gradually, stirring with a wooden spoon.
You must obtain a soft and a little sticky dough. If the dough is too sticky, add a little more flour. Add flour gradually, with a spoon, until you obtain a “workable” dough.
Place the prepared dough onto the well floured working surface. Divide the dough into 6 equal pieces (or 8, if you want smaller doughnuts).
Take 1 piece of dough and divide it into 2 pieces: a very small piece and a larger one. Shape the small piece of dough into a ball. Take the larger piece of dough and flatten it between your hands, trying to keep a circle shape. Place the flattened dough onto the working surface. Flour your finger and make a hole in the middle of the dough.
Repeat with the remaining pieces of dough.
Meanwhile use a frying pan to heat the oil.
Place the doughnuts into hot oil and fry the on both sides until golden brown. Fry the doughnuts in batches.
Remove from oil and place the doughnuts onto paper towels.
Place a large doughnut onto a platter and place the smaller one (the ball) on top of it. Sprinkle with cream and jam.
Serve the Romanian cheese doughnuts warm.
