These tender and juicy chicken and vegetable skewers make the perfect choice for those looking for a healthy dinner recipe.
Chicken and vegetable skewers are easy to make and you can use your favorite combo of vegetables. You can also use zucchini, eggplants, cucumbers, tomatoes or any other vegetable you like.
For tender and juicy skewers, you have to marinate the meat for 4-6 hours or over night. For marinating the meat you can also use the marinade I made for Souvlaki.
You can serve these delicious chicken and vegetable skewers with salad or with your favorite side dish.
Ingredients for chicken and vegetable skewers (8-10 pieces)
– 700 gr (1.55 lbs) boneless chicken breast (or boneless thighs)
– 1-2 bell peppers
– 4-6 button mushrooms
– 2 large onions
– 1.5- 2 tablespoons chicken seasoning mix (with salt)
– 3 tablespoons olive oil
– 3 tablespoons lemon juice

How to make chicken and vegetable skewers
You have to start by making the marinade. Use a small bowl to combine chicken seasoning mix, olive oil and lemon juice.
Cut the chicken breast into 2-3 cm pieces and put them into a medium bowl. Add the marinade and mix well.
Cover the bowl with plastic wrap and refrigerate for at least 4-6 hours or over night.
How to assemble chicken and vegetable skewers
Cut the vegetables into 2-3cm pieces, similar to the chicken pieces.
Remove chicken from the marinade.
Thread chicken, bell pepper, mushrooms and onions alternately onto skewers.
Grill over medium heat for about 15 minutes or until the meat is cooked through.
Serve these delicious chicken vegetable skewers with Tzatziki or with creamy mustard sauce and your favorite side dish.
