Potato Gnocchi – the italian recipe

Potato gnocchi are Italian pasta, very similar to dumplings, made from potatoes, eggs and flour. They are very soft and tender and seems to melt into your mouth.
To prepare these gnocchi I used an Italian recipe, to be sure of result 🙂
To obtain that tenderness specific to Italian gnocchi you have to prepare a soft and sticky dough. If you add too much flour potato gnocchi will be too tough.
The dough is rolled out, then cut into small pieces. Then they are pressed with a fork to make ridges which hold sauce.
Place prepared gnocchi onto a floured surface, in one layer, keeping distance between them.
After preparation, you can cook gnocchi immediately or freeze them.
Serve potato gnocchi with you favorite sauce, sprinkled with grated parmesan and fresh herbs.

Ingredients for potato gnocchi – the Italian recipe

– 1 kg (2.2 lbs) potatoes
– 300 gr (2 1/3 cups and 1 tablespoon) flour
– 1 egg
– salt to taste
– pepper (optional)

How to make potato gnocchi – the Italian recipe

Wash the potatoes and place them, unpeeled, into a large pot with enough cold water to cover. Add salt and cover with a lid.
Bring to a boil and cook until the potatoes are tender when pierced with a fork.
Drain the potatoes and allow to cool just enough to handle.
Peel the potatoes, place them into a large bowl and mash them.
Add salt and pepper, mix and taste to adjust the quantity of salt.
Add the egg and mix to incorporate.
Add the flour, gradually, stirring with a spoon. When the dough becomes too thick to stir, continue to knead until the whole flour is incorporated.
You must obtain a soft and sticky dough.
Divide the dough into medium pieces (8 to 10 pieces).
Take 1 piece of dough and place it onto the floured working surface.
Shape the dough into a 2cm thick rope. Cut the rope into 2cm pieces.

Sprinkle flour as many times as you need.
Take 1 piece of dough, place it onto the tines of a fork and press with you finger.
Set on a floured baking sheet.
Continue with the remaining dough.
Bring a large pot with salted water to a boil.
Drop about half the gnocchi into the boiling water and stir with a spoon to avoid sticking.
Cook for 2-4 minutes. Gnocchi are done when they rise to the surface.
Drain gnocchi and serve with your favorite sauce, sprinkled with parmesan and fresh herbs.
