Tomato and bell pepper pasta sauce

For me is very important to have a good pasta sauce recipe. With pasta and a delicious sauce I can prepare nourishing, quick and easy dinners for my family.
I tested many pasta sauce recipes, but this tomato and bell pepper pasta sauce is our favorite. It’s very easy to make with a handful of ingredients, absolutely delicious and it can be used in many combinations.
The perfect sauce should be made with fresh and juicy garden tomatoes, but you can also use canned tomatoes or even tomato paste.
You can combine this tomato and bell pepper sauce with ham, chicken or vegetables.

Ingredients for tomato and bell pepper pasta sauce (4 serves):

– 1kg (2.2 lbs) tomatoes
– 1 bell pepper
– 1 onion
– 4-5 garlic cloves
– 2-3 tablespoons vegetable oil
– salt and pepper to taste
– 1 bunch fresh parsley

How to make tomato and bell pepper pasta sauce

First you should peel the tomatoes. If they are very ripe, you can easily peel them with a sharp knife.
If the tomatoes are’n easy to peel, you can use boiling water method.
Use a sharp knife to make an X into the bottom of the tomato. Place the tomatoes into boiling water and boil for about 25-30 seconds (or til the X begin to split).
Grate the peeled tomatoes. Set aside.
Finely chop the onion and place it into a skillet with 2-3 tablespoons of vegetable oil. Place the skillet over medium heat and cook until the onion turns glossy.
Add the finely chopped garlic and continue to cook for 1-2 minutes. Stir often.
Add the bell pepper chopped into small strips.
Continue to cook till the bell pepper is tender.
Add the grated tomatoes (along with their juices) and season with salt and pepper.

Continue to cook, stirring often, until thickened and reduced.
Remove from heat and add fresh parsley.
Add cooked pasta and combine.
Serve sprinkled with grated parmesan.
