Chocolate pastry cream

Chocolate pastry cream is one of my favorites. I use it often for filling pastry, cakes, pies or cookies. I also like to use this chocolate pastry cream to prepare easy desserts with fresh fruits and crackers. And I can’t tell you how absolutely delicious are the crepes filled with chocolate pastry cream
To prepare this chocolate pastry cream I start by making the vanilla pastry cream and I add cocoa powder and chocolate. You can use cocoa powder or chocolate but the cream will taste better if you use both of them .

You can use the chocolate pastry cream as it is or you can mix it with whipped cream or soft butter.

Ingredients for chocolate pastry cream

  • 500 ml (2 cups and 2 tablespoons) milk
  • 3 egg yolks
  • 50 gr (1.7 oz) dark chocolate
  • 25 gr (3 tablespoons) cocoa powder
  • 40 gr (5 tablespoons) flour
  • 100 gr (1/2 cup) sugar
  • vanilla or rum flavor

How to make chocolate pastry cream

Set aside 4-5 tablespoons of cold milk.
Warm the rest of the milk until hot. Set aside.
Place the egg yolks and sugar into a heatproof pan. Mix until creamy and pale. Add the cold milk and mix to incorporate.
Add the flour and cocoa powder and mix to incorporate.
Pour the hot milk, gradually, and mix to incorporate.
Add the dark chocolate, pieces.
Place the pan over heat and cook until thickens. The chocolate pastry cream is ready when it starts to make bubbles.

Remove from heat and add you favorite flavor (vanilla or rum). I prefer rum 🙂
Cover with plastic wrap, placed right over the cream, and allow to cool.
Use the chocolate pastry cream as it is or combined with whipped cream or butter.
