Ingredients for Chocolate Magic custard cake – 17/27cm (6.69/10.62 in) or a 20/20cm (7.87/7.87 in) baking tray:
500 ml (2 cups 1 tablespoon and 1 teaspoon) milk
100 gr (1 stick minus 1 tablespoon) butter, melted
100 gr (3.52 oz) chocolate, melted
75 gr (1/2 cup and 3 tablespoons) flour
50 gr (1/2 cup/ 1.7 oz) cocoa powder
150 gr (1 cup and 3 tablespoons) confectioners’ sugar
a pinch of salt
Confectioners’ sugar for dusting
You should start by preheating the oven to 160º C (320 º F).
Butter a 17/27cm (6.69/10.62 in) or a 20/20cm (7.87/7.87 in) baking tray.
Beat the egg yolks and confectioners’ sugar until turns creamy and pale.
Add the vanilla/rum flavor and the melted chocolate. Mix to incorporate.
Add the melted butter and beat until evenly incorporated.
Add the cocoa powder and incorporate.
Add half of the flour, incorporate. Add half of the milk and incorporate.
Add the rest of the flour and the rest of the milk and mix after each one to incorporate.
Place the egg whites into a bowl and add a pinch of salt. Mix at high speed until stiff peaks form.
Use a wooden spoon or a spatula to fold in the egg whites. It’s ok if there are a few lumps into the batter.
Pour the batter into the prepared baking tray. Bake at 160ºC (320 º F) for 50-60 minutes or at 180ºC (356 º F) for 45 minutes.
