Baked cauliflower fritters (vegan)

Flavorful, juicy and very nourishing, these baked cauliflower fritters make the perfect choice for a healthy snack or for a vegan meal.
These cauliflower fritters are very easy to make but not so quick because you have to cook the potatoes and the cauliflower. When you cook the potatoes you should leave the skins on, otherwise they will absorb too much water.
To prepare the cauliflower fritters you have to mash the potatoes (like for mashed potatoes). Then add finely chopped cauliflower, finely chopped onion, crushed garlic and chopped dill. Combine all the ingredients and add breadcrumbs to thicken the mixture. You should obtain a quite hard mixture. Then roll the cauliflower fritters through breadcrumbs, place them into a slightly oiled baking dish and bake.
You may serve these cauliflower fritters as a snack or as an appetizer but also as a vegan meal. They go well with roasted potatoes, with rice or salad. You can also prepare a delicious burger using cauliflower fritters.
This recipe makes about 19-20 fritters.

Ingredients for baked cauliflower fritters (vegan):

– 500 gr (17.63 oz) cauliflower
– 400 gr (14.10 oz) potatoes
– 1 onion
– 3 garlic cloves
– 1 bunch of fresh dill
– salt and pepper to taste
– about 5 tablespoons breadcrumbs
You also need:
– 2-3 tablespoons of vegetable oil to drizzle and to coat the baking sheet
– breadcrumbs for rolling the fritters

How to make baked cauliflower fritters (vegan)

You should start by cooking the potatoes (leaving the skins on).
Rinse the potatoes and place them into a large pot with water and salt. Cover the pot with a lid and place it over medium heat. Bring to a boil and cook until the potatoes are tender when pierced with a fork.
Drain the potatoes and allow to cool.
Meanwhile prepare the cauliflower.
Cut the cauliflower into florets. Set aside.
Fill a large pot with cold water and add some ice cubes. Keep the pot into the refrigerator.
Fill another large pot with water. Place the pot over medium heat, add salt and bring to a boil.
Toss the cauliflower florets into simmering water, bring back to a boil and cook for 3 minutes.
Drain the cauliflower and transfer to the pot with cold water and ice to stop the cooking process. Allow to cool for 2-3 minutes then drain the cauliflower.
Skin the potatoes, place them into a large bowl and mash (like for mashed potatoes).
Add finely chopped cauliflower, finely chopped onion, crushed garlic and chopped dill. Season with salt and pepper and stir to combine.

Add breadcrumbs, spoon by spoon, until you get a quite hard mixture (something like a shortcrust pastry dough). It’s important to add enough breadcrumbs because the fritters will soften into the oven.
Next, shape the fritters and coat them with breadcrumbs. Place the cauliflower fritters into a greased baking sheet. Drizzle with vegetable oil.
Place the cauliflower fritters into the oven and bake at 190ºC (374ºF) for about 15 minutes. Then flip the fritters on the other side and bake for another 12-15 minutes.
Serve these delicious cauliflower fritters warm or cold, as a snack, as an appetizer or as a meal.
