Green beans salad with feta cheese and eggs

Very tasty, packed with flavor and nourishing, this green beans salad with feta cheese and eggs makes the perfect choice for lunch or for a quick and easy dinner. You may serve this delicious salad as a starter or as a side dish but also as a main dish.
This is also a quick and easy to make salad and you can use your favorite veggies. Cherry tomatoes, red bell pepper, green onions and olives go well with green beans. But you can also add to your salad carrots, peas, sweet corn, chickpeas, cucumbers or any other veggie you might like. As regarding the green beans, it can be fresh, frozen or canned. I prefer frozen beans because is natural but easier to cook than fresh green beans. If you decide to use canned green beans, your job is even easier because all you have to do is to drain it 🙂
Although this green beans salad with feta cheese and eggs was super delicious, my husband had a complaint: “Where’s the ham??? Really, there’s no ham???”
I have to admit that I wasn’t inspired when I made the ingredients list for this salad. Next time I’ll submit the ingredients to my husband for approval 🙂

Ingredients for the green beans salad with feta cheese and eggs

– 700 gr (1.54 lbs) frozen green beans
– 500 gr (1.1 lbs) cherry tomatoes
– 1 bunch of green onions
– 1 red bell pepper
– 150 gr (5.29 oz) stoned black olives
– 200 gr (7.05 oz) feta cheese
– 5 eggs (hard boiled)
– salt, pepper, lemon juice (or vinegar) and olive oil to taste

How to make the green beans salad with feta cheese and eggs

You should start by cooking the green beans
Fill a medium pot with water. Add salt, cover with a lid and place the pot over high heat. Bring to a rolling  boil. Toss the green beans into simmering water, cover with a lid and bring back to a boil.
Note: It’s not necessary to thaw the green beans. Just toss it into simmering water.
Cook until the beans is cooked through (it will take only a few minutes).
Drain the beans and transfer to another pot.filled with very cold water and ice. This will stop the cooking process. Allow to cool for a few minutes then drain and allow to completely cool (into the strainer). Set aside.
Meanwhile you may cook the eggs.
Place the eggs into a medium pot. Fill the pot with just enoigh water to cover the eggs by an inch.
Place the pot over high heat and bring to a rolling boil. Remove from heat, cover with a lid and allow to rest for 15 minutes.
Transfer the eggs into another pot filled with very cold water and ice. Allow to cool.
How to assemble the grean beans salad with feta cheese and eggs.
Place the green beans into a large bowl.
Add the green onions cut into rings (the white parts and the green parts), the red bell pepper cut into small strips, the cherry tomatoes cut into halves and the olives.
Season with salt, vegetable oil and lemon juice (or vinegar).
Stir to combine.
Add chopped parsley and the feta cheese and stir to combine.
Transfer the salad to bowls and garnish with sliced eggs.
