Spice-crusted pork loin roast

Juicy and very tender, packed with flavor an incredible easy to make, this spice-crusted pork loin roast became our family favorite. I have already made this recipe twice and my husband asked me to prepare this recipe every weekend :).

This pork roast is very easy to prepare even if you have to prepare a large amount.

You may use your favorite spices. First time I used red pepper which was a little sweet and incredible flavored. Second time I didn’t find red pepper and I used green pepper. Well, I’ve found out that green pepper is very hot and it seemed that something was missing from my pork roast :). So, red pepper is very important.

As regarding the meat, you may use pork loin or pork tenderloin.

You may serve this super delicious spice-crusted pork loin roast along with your favorite side dish. It goes excellent along with mashed potatoes, roasted potatoes, rice or salad. You may use leftovers to prepare delicious sandwiches.

Ingredients for the spice-crusted pork loin roast

– 2 kg (4.4lbs) pork loin (or tenderloin)

– 3 tablespoons vegetable oil

– 1/2 lemon, juiced

– 1 teaspoon allspice berries

– 1 tablespoons black peppercorns

– 2 tablespoons red peppercorns

– 2 tablespoons mustard seeds

– 1 tablespoon ground cumin

– 2 tablespoons garlic powder

– 2 teaspoons salt

– 1 tablespoon dried thyme

You also need a few more tablespoons of vegetable oil for frying the meat

How to make the spice-crusted pork loin roast

Use a small bowl to combine lemon juice and the vegetable oil.

Use a mortar to crush the peppercorns, the mustard seeds and the allspice berries. Add salt and the remaining spices and stir to combine.

Divide the meat into 2 pieces (to fit your skillet).

Brush the meat with the vegetable oil-lemon juice mixture.

Sprinkle 1 tablespoon of spice onto a plastic wrap. Place 1 piece of pork on top and sprinkle 1-2 tablespoons of spices. Coat the meat evenly. Cover with plastic wrap.

Repeat with the second piece of pork loin.

Refrigerate for about 2 hours.

Pour a few tablespoons of vegetable oil into a skillet. Heat the oil.

Remove the pork loin from the plastic wrap and place it into the skillet. Fry the meat on all the sides for about 3 minutes.

This step is very important. By frying the meat before roasting it the juices are sealed in and you’ll get the most tender pork roast.

Repeat with the second piece of meat.

Place the pork into a greased baking tray. Add 1 cup of water and place the baking tray into the preheated oven.

Bake at 190°C (374°F) for about 40-50 minutes.

If necessary, pour another cup of water into the baking tray.

Remove from the oven and allow to rest for about 10 minutes.

Slice and serve with your favorite side dish. This spice – crusted pork loin roast goes great with potatoes and salad 🙂
