This chocolate zucchini slice is amazing! Soft, moist, rich and packed with flavor (not any flavor, I’m talking about chocolate and cinnamon flavor!) this chocolate zucchini slice is sooo goood… I mean it’s yummylicios 🙂
But what makes this cake so special? The answer is simple: zucchini. Zucchini in a cake may sound weird but you have to trust me: zucchini bring that special moisture to this cake.
And not only the zucchini have this special effect on cakes. Carrots, apples or bananas are other examples of veggies/fruits which you can add to your dessert for extra moisture.
And the best part of this chocolate zucchini slice is that you won’t even realize there’s zucchini inside. You can’t feel them. This cake has a strong chocolate flavor and a subtle cinnamon flavor but no zucchini flavor.
So, if your kids (or husband) are picky when it comes to vegetables, make them a cake!
To prepare this delicious chocolate zucchini slice you should start by grating the zucchini. Then sprinkle some salt ans allow to rest for about 30 minutes. Salt will help zucchini to release water. Then squeeze grated zucchini very well into your fist because we don’t want all that water into our cake. I mean we want a chocolate zucchini cake, not a zucchini soup :).
For a strong chocolate flavor you should use cocoa powder and dark chocolate chips.
I also added 1 teaspoon of ground cinnamon because it goes excellent with zucchini but you can replace it with 1 teaspoon of instant coffee.
This cake is also incredibly easy to prepare: all you have to do is to combine all the ingredients and bake. You don’t need any special skills or instruments.

Ingredients for the chocolate zucchini slice (for a 25/35 cm – 9.84/13.7 in baking tray)
– 500-600 gr (1.1-1.3 lb) zucchini
– 180 gr (6.34 oz) dark chocolate
– 250 gr (2 cups) flour
– 63 gr (3/4 cup) cocoa powder
– 2 teaspoons baking soda
– 1/2 teaspoon baking powder
– 240 ml (1 cup) vegetable oil
– 350 gr (1 3/4 cup) granulated sugar
– 5 eggs
– 80 gr (1/3 cup) yogurt
– vanilla flavor
– 1 teaspoon ground cinnamon (or 1 teaspoon instant coffee)
How to make the chocolate zucchini slice
Rinse and grate the zucchini. Place the grated zucchini into a strainer, sprinkle some salt and allow to rest for about 30 minutes. Thoroughly squeeze the zucchini into your fist. Place the squeezed zucchini into a bowl, sprinkle 1 teaspoon of ground cinnamon and stir to combine. Set aside.
Use a medium bowl to combine flour, cocoa powder, baking soda and baking powder. Set aside.
Use a large bowl to combine vegetable oil, sugar, eggs, vanilla flavor and yogurt. Mix to combine.
Add the chocolate chips and the zucchini and mix to combine.
Add the flour (combined with cocoa powder baking soda and baking powder). Use a spatula to incorporate it.
Transfer the batter into a baking tray lined with parchment paper.
Place the baking tray into the preheated oven and bake at 180ºC (356ºF) for about 30 minutes.
The chocolate zucchini slice must be as firm in the center as on the edges.
Remove from the oven and allow to cool on wire racks.
Cut into pieces and serve with a dust sugar or topped with chocolate sauce.
