It’s also pretty easy to prepare with a handful of ingredients.
To prepare this delicious bread you should start by grating the zucchini. Zucchini contain a huge amount of water and you should grate them, sprinkle some salt and allow to rest for about half an hour to leave water. Then squeeze zucchini into your fist and combine with the rest of ingredients. You have to respect this step, otherwise you bread will be too moist.
My kids loved this feta cheese zucchini bread although they aren’t zucchini fans. But you don’t have to worry about the zucchini flavor because it’s very subtle. The main flavors are of feta cheese and dill and maybe black pepper if you sprinkle tons of it like I did :).

Ingredients for feta cheese zucchini bread
– 600 gr (1.3 lb) zucchini
– 1 carrot
– 1 bunch green onions
– 1 bunch fresh dill
– 240 ml (1 cup) buttermilk
– 3 large eggs
– 60 ml (1/4 cup) vegetable oil
– 250 gr (8.8 oz) feta cheese
– 435 gr (3 1/2 cups) flour
– 1 teaspoon baking powder
– 1 teaspoon baking soda
– salt and pepper to taste
How to make feta cheese zucchini bread
You should start with the zucchini.
Rinse and grate the zucchini. Place grated zucchini into a colander, sprinkle some salt and allow to rest for about 30 minutes. After 30 minutes thoroughly squeeze the zucchini into your fist. Set aside.
Meanwhile grate the feta cheese. Set aside.
Chop the green onions (the white parts and the green parts). Set aside.
Finely grate the carrot and chop the dill. Set aside.
Crack the eggs into a large bowl. Mix until foam forms.
Add vegetable oil and buttermilk and mix to combine. Stir in the zucchini, carrot, chopped onions and dill.
Season with salt and pepper.
Stir in the flour combined with baking powder and baking soda.
Stir in the feta cheese.
Transfer the batter to a baking pan lined with parchment paper.
Place the feta cheese zucchini bread into the preheated oven and bake at 180°C (about 350°F) for about 1 hour – 1 hour and 15 minutes or until a toothpick inserted in center comes out clean.
Allow to completely cool (for a few hours).
Serve this super delicious feta cheese zucchini bread as a snack or as an appetizer.
