Ingredients for meat stuffed puff pastry cups.– 800 gr (1.76 lbs) frozen puff pastry – 600 gr (1.32 lbs) ground meat – 2 tablespoons vegetable oil – 1 onion – 1 red bell pepper – 4-5 garlic cloves – 2 tablespoons tomato paste – 1 bunch fresh parsley – 1 teaspoon dried thyme – salt and pepper to taste – 200-250 gr (7.05-8.81 oz) grated cheese
How to make meat stuffed puff pastry cups
Thaw the puff pastry. Meanwhile prepare the filling. Finely chop the onion and place it into a skillet along with 2 tablespoons of vegetable oil. Cook , stirring constantly, until glossy. Add the red bell pepper cut into small strips and continue to cook, stirring often, until soft. Add the ground meat and continue to cook until the neat changes color. Season with salt, pepper and dried thyme. Add 2 tablespoons of tomato paste and crushed garlic and stir to combine. Continue to cook, stirring occasionally, until reduced. Remove from heat and add chopped parsley. Allow to cool. How to shape the puff pastry cups. If you have only 1 sheet of puff pastry you should divide into 2 sheets because is easier to work with smaller pieces of dough. Place 1 sheet of dough onto the working surface and roll it out into a 30/40 cm (11.81/15.7 in) rectangle. Cut into 10/10 cm (3.9/3.9 in) squares. You should obtain 12 squares. Place the puff pastry squares into a muffin tin and prick them with a fork. Place the muffin tin into the preheated oven an bake at 200 °C (392 °F) for about 5-7 minutes (until puff up). Remove from the oven and use a fork or a spoon to push down the bottom if each puff pastry cup. Fill the puff pastry cups. You should gently press the filling into the cups. Top with grated cheese and continue to bake at 200 °C (392 °F) for another 12-15 minutes (or until golden brown). Repeat with the remaining sheet of dough.
