Zebra (marble) loaf cake (video recipe)

Soft, flaky, super delicious and super easy to prepare, this zebra (marble) loaf cake is one of my favorite desserts. Also this black and white loaf cake is very appetizing and cute and yet very simple and easy to prepare with a handful of ingredients. It’s very famous in Romania :). Today I want to share my recipe with you and show you how to make this pretty zebra (marble) loaf cake. It’s very easy!
As I was saying, to prepare this zebra loaf cake you need a handful of ingredients: eggs, flour, sugar, cocoa powder, vegetable oil, a pinch of salt, baking powder and vanilla essence. These are affordable ingredients which I’m sure they can be find in every single kitchen.
This zebra loaf cake is very similar to sponge cake. It’s soft, light and flaky like sponge cake but it contains vegetable oil and baking powder, ingredients that we don’t use for sponge cake. Actually it was a little difficult to find a name for this cake because we call it “chec” but I couldn’t find the English translation for this word :).
Anyway, when you prepare this zebra loaf cake you should respect the rules mentioned in the sponge cake recipe.
But how do we get that zebra pattern? That’s very easy: you should divide the batter into 2 equal parts and make 1 white and 1 black. Then spoon the batter into the loaf pan, 1 spoon of white batter, then 1 spoon of black batter till you finish them. Use 1 spoon for each batter.

You may serve this delicious zebra (marble) loaf cake as it is or with a dust of sugar.
This loaf cake is very pretty and easy to prepare and it makes the perfect dessert for parties, especially for kids parties. It’s very easy for them to grab a piece of zebra loaf cake with their tiny hands 🙂

Ingredients for zebra (marble) loaf cake:

– 5 eggs
– 200 gr (1 2/3 cups) flour
– 200 gr (1 cup) granulated sugar
– 30 gr (4 tablespoons) cocoa powder
– 100 ml (1/3 cup 1 tablespoon and 1 teaspoon) vegetable oil
– a pinch of salt
– 1 teaspoon baking powder
– 2 tablespoons vanilla essence

You also need a 30/11.5cm (11.8-4.5 inches) loaf pan
You should also try:

Separate the egg whites from yolks. Set aside the yolks.
Place the whites into a large mixing bowl, add a pinch of salt and mix at high speed until fluffy.
Add granulated sugar, in 2-3 steps, and continue to mix until the sugar is completely dissolved. You should obtain a firm and shiny meringue.
Pour the vegetable oil over the egg yolks, gradually. Stir until well incorporated.
Pour the egg yolks and vegetable oil mixture over the meringue and mix to incorporate. Add vanilla essence and mix.
Use a medium bowl to combine flour and baking powder. Set aside 30 gr (4 tablespoons) of flour.
Use a spatula or a wooden spoon to incorporate the flour into the batter.
Divide the batter in 2 equal parts.
Incorporate the cocoa into one bowl. Incorporate the remaining flour into the second bowl.
Spoon the batter into the loaf pan lined with parchment paper: 1 spoon white then 1 spoon black and repeat till you finish the batter. You should alternate the 2 colors: black and white to obtain the zebra pattern.
Place the zebra loaf cake into the preheated oven and bake at 180º C (356º F) for about 40 minutes.
Remove the zebra loaf cake from the oven and insert a toothpick in center. The toothpick must come out clean.
You may serve this delicious zebra loaf cake as it is or with a dust of sugar.
