My dear friends, I have to tell you from the beginning that this recipe is a keeper! These jam and walnuts bars are a super delicious combo of crumbly crust, flavored jam and crunchy walnuts. Also these bars are very easy to prepare with affordable ingredients.
These jam and walnuts bars are very popular in Romania. In summer time we have as main activity to make jam. It’s like a national sport :). We start with strawberry, cherry and sour cherry jam, we continue with apricot jam and we end with prunes, apple and quince jam. Every housewife makes tens of jars of jam. At least :). And what can we do with all this jam? We make cakes, pies, cookies and many other goodies.
This jam and walnuts bars recipe is one of my favorites and I want to share it with you.
You should start by preparing the dough: combine all the ingredients and knead just enough to incorporate all the flour. Then divide the dough in 2 equal pieces: one for the bottom layer and one for the top layer.
The top layer is made of grated dough. In order to do that you must freeze the top layer dough for about 30 minutes. The dough will be easier to grate. You may keep the other piece of dough (for the bottom layer) at room temperature or in the refrigerator. The dough kept at room temperature is easier to roll out but it may be a little sticky.
The filling is very easy to prepare: combine jam and ground walnuts. I used blackberries jam (thanks mom!) but you can use your favorite jam.
To assemble the jam and walnuts bars is also a piece of cake :). Roll out the dough for the bottom layer and place it into the baking tray, evenly spread the filling and top with the second piece of dough, grated.
You may serve these super delicious jam and walnuts bars with a dust of sugar. You definitely have to give them a try!

Ingredients for jam and walnuts bars (25/35 cm – 9.84/13.77 inches baking tray)
– 500 -550 gr (4 cups – 4 1/3 cups and 1 tablespoon) flour
– 100 gr (1/2 cup) granulated sugar
– 200 gr (1 3/4 stick) butter
– 100 gr (1/2 cup minus 1 tablespoon) sour cream
– 1 egg
– vanilla essence
– 10 gr (0,35 oz) baking powder
– a pinch of salt
– 450 gr (15.87 oz) jam
– 150 gr (5.29 oz) ground walnuts
Optional: powdered sugar for dusting
How to make jam and walnuts bars
Use a medium bowl to stir together flour (500 gr/ 4 cups ), a pinch of salt and baking powder. Set aside.
Place sugar and butter into a large mixing bowl. Mix until creamy. Add the vanilla essence and the egg and mix to combine. Add the sour cream and mix.
Stir in the flour. When the dough becomes too thick to stir continue to knead just until the whole flour is incorporated. If the dough is too sticky, you may add a little more flour (up to 50 gr / 1/3 cups and 1 tablespoon).
Divide the dough in 2 equal pieces, one for the bottom layer and one for the top layer. Place the dough for the top layer into the freezer for about 30 minutes and the other one you may keep into the refrigerator or at room temperature.
Meanwhile prepare the filling: use a medium bowl to combine jam and ground walnuts. Set aside.
Place the dough for the bottom layer onto the table. Roll out the dough into a 25/35 cm (9.84/13.77 inches) rectangle.
Place the dough into the baking tray and prick it with a fork.
Evenly spread the jam and walnuts mixture.
Remove the dough from from the freezer and grate it over the jam layer.
Place the baking tray into the preheated oven and bake at 180ºC (356 ºF)for about 30-35 minutes (or until the edges are golden brown).
Allow to cool and cut into pieces.
Serve with a dust of sugar.
