Jam and walnuts crescent rolls (video recipe)

So tender that they simply melt into your mouth, these jam and walnuts crescent rolls are definitely a must try recipe! These crescent rolls are flaky and very tender, filled with a sweet and a little sourish mixture of jam and ground walnuts and coated with powdered sugar. Mmmm, delightful!

These jam and walnuts crescent rolls are very popular in Romania. They are one of our favorite desserts in winter time, especially for Christmas. It’s our winter favorite sweet treat because we have our kitchens stuffed with jam and walnuts :).

You may use your favorite jam or instead of jam and walnuts you may use Turkish delight.

These jam and walnuts crescent rolls are very easy to prepare with a handful of ingredients. It’s not necessary to add any rising agent. The dough puffs up because it is made with butter and eggs.

To prepare the dough you have to combine all the ingredients and knead just until the whole flour is incorporated. You should obtain a soft and a little sticky dough, this is the secret for soft and flaky crescent rolls. If you add too much flour or if you knead too much your crescent rolls will be harder.

The dough contains butter and after you prepare it you should refrigerate it for 30 minutes – 1 hour; it will be easier to roll out.

Then divide the dough into 4 pieces, roll out each piece of dough into circle and cut triangles. Spoon the filling, roll and bake. It’s very easy.

These jam and walnuts crescent rolls are coated with powdered sugar. You have to roll them through powdered sugar while they are still hot. Powdered sugar won’t stick to cold crescent rolls.

Ingredients for jam and walnuts crescent rolls ( 32 pieces)

For dough:

– 300-350 gr (2 1/3 cups and 1 tablespoon – 2 3/4 cups) flour

– 150 gr (2/3 cup) sour cream

– 200 gr (1 3/4 stick) butter, 80% fat

– 3 egg yolks

– a pinch of salt

– vanilla essence

For filling:

– 250 gr (8.81 oz) jam

– 100 gr (3.52 oz) ground walnuts

For rolling: 100 gr (3.52 oz) powdered vanilla sugar

Place 300 gr (2 1/3 cups and 1 tablespoon)  flour into a large bowl. Add a pinch of salt and diced butter (cold) and mix until the flour looks like breadcrumbs. Add the egg yolks, vanilla essence and sour cream and mix to incorporate. If the dough is too soft and sticky you may add a little more flour.

Shape the dough into a ball, cover with plastic wrap and refrigerate for 30 minutes – one hour.

Meanwhile prepare the filling: use a small bowl to combine jam and ground walnuts. Set aside.

Divide the dough in 4 equal pieces.

Place 1 piece of dough onto the floured working surface. Roll the dough into a 24 cm (9.44 in) circle then cut into 8 triangles. Place about 1 teaspoonful of filling onto each triangle, close to base.

Roll the triangles starting from base.

Repeat with the remaining pieces of dough.

Place the jam and walnuts crescent rolls into a baking tray lined with parchment paper.

Bake at 170 °C (338 °F) for about 15 minutes. Remove from the oven and immediately roll through vanilla powdered sugar.

Allow to cool and serve.
