Soft and flaky sponge cake squares, dipped in chocolate sauced and coated with desiccated coconut…. Mmm, this Lamington cake is absolutely amazing! Also it is quick and easy to make with a handful of ingredients and you definitely have to give it a try!
This amazing cake comes from Australia. Lamington cake is made from butter cake or sponge cake cut into squares then dipped into chocolate sauce and coated with desiccated coconut. A variation of the Lamington cake is the layered Lamington cake with a middle layer of cream or strawberry jam.

The Lamington cake was named after Lord Lamington, who served as Governor of Queensland.
This delicious cake was invented by lord Lamington’s chef who had to feed unexpected guests. So, this ingenious chef used some left-over sponge cake, cut it into squares then dipped the squares into chocolate sauce and coated them with coconut. The guest were impressed about this new and amazing cake!
This Lamington cake is also very popular in Romania because is on a budget and yet super delicious and easy to make. It makes the perfect sweet treat for holidays.
As I was saying, this cake is very quick and easy to prepare. You should start by making the cake which is a low fat version of butter cake. Bake the cake,allow to cool completely and meanwhile make the chocolate sauce. Then cut the cake into squares, dip into the chocolate sauce and coat with coconut. I might say as easy as apple pie 🙂

Ingredients for the Lamington cake (for a 25/35 cm / 9.84/13.7 inches baking dish)

For cake:
– 300gr ( 2 1/3 cups and 1 tablespoon) flour
– 5 egs (separated whites from yolks)
– 200 ml (3/4 cup 1 tablespoon and 1 teaspoon) milk
– 100 gr (1 stick minus 1 tablespoon) butter
– 200 gr (1 cup) granulated sugar
– a pinch of salt
– 1 teaspoon baking powder
– vanilla essence
For the chocolate sauce

– 100 gr (1 stick minus 1 tablespoon) butter
– 250 ml (1 cup and 1 tablespoon) water
– 70 gr (2.46 oz) cocoa powder
– 300 gr (1 1/2 cup) granulated sugar
– rum essence

For coating the Lamington cake:
– 200 gr (7.05 oz) desiccated coconut

How to make the Lamington cake

How to make the cake
Stir together flour, a pinch of salt and baking powder. Set aside.
Place into a large bowl granulated sugar, soft butter and the egg yolks.
Mix on high speed until creamy and pale. Add the vanilla essence and the milk and mix to incorporate.
Stir in the flour.
Place the whites into a mixing bowl. Mix on high speed until fluffy.
Fold the whites into the batter.
Pour the batter into the baking dish lined with parchment paper.
Place the Lamington cake into the preheated oven and bake on 180 °C (356º F) for about 20-25 minutes ( or until a toothpick inserted in the center of the cake comes out clean).
Remove from the oven and allow to cool completely.

Meanwhile prepare the chocolate sauce.

How to make the chocolate sauce for the Lamington cake
Use a small pot to combine sugar, cocoa powder and water. Place the pot over medium heat, cook until warm then add the butter. Bring to a boil and continue to cook until thickens (for about 4-5 minutes).

Allow to cool.

How to glaze the Lamington cake
Cut the cake into squares.
Dip each piece of cake into the chocolate sauce. Keep the piece of cake into the chocolate sauce for a few seconds, just to absorb some chocolate sauce but the center should remain dry. Then roll in coconut until evenly coated.
Transfer to a platter.

Repeat with the remaining pieces of cake.

Allow to rest at room temperature for about 1 hour then you may serve this super yummy Lamington cake.
