Absolutely delicious and incredibly easy to make, this savory homemade pie is my favorite snack! Just thaw the phyllo dough, stir together all the ingredients to make the filling, layer the pie and bake. It takes up to 1 hour, baking time included, to prepare this cheese Burek (Börek) recipe!
Börek or burek is a type of baked filled pastries made with thin dough sheets as phyllo or yufka. This delicious savory pie has Turkish origins but is also very famous in the cuisines of many countries from Eastern Europe and Western Asia. A börek/ burek may be prepared in a large pan (round or rectangular) and cut into pieces after baking, or as individual pies.
The top of the börek/ burek is occasionally sprinkled with sesame or poppy seeds but some dried oregano or dried thyme would also be a great choice.
I must admit that I use frozen phyllo dough because it’s easier to thaw the dough than to make it from scratch… Also I must admit that homemade dough is the best, so, if you have about 30 minutes spare, here’s the recipe:
Homemade phyllo (filo) dough recipe
– 400-450 gr (3 cups and 2 tablespoons – up to 3 1/2 cups) flour
– 250 ml (1 cup and 1 tablespoon) warm water
– 50 ml (3 tablespoons and 1 teaspoon) vegetable oil
– 1 teaspoon salt
Make the dough, divide into 4 pieces, roll out each piece of dough to fit the baking pan then layer the pie and bake.
As regarding the filling, there are many options: feta cheese, feta cheese and spinach, feta cheese and zucchini or meat. I also love sweet pies and I make pretty often sweet versions of burek with apple, yogurt, pumpkin or curd cheese. My favorite is the yogurt pie with phyllo dough.
To prepare this delicious cheese burek I’ve used a combo of feta cheese, curd cheese, sour cream and eggs (you can add salt to taste).
This savory cheese pie goes great along with a Greek yogurt and you definitely have to give it a try!

Ingredients for Cheese Burek (Börek) recipe (for a 25/35 cm – 9.84/13.7 inches baking dish)
– 1 package (400 gr/ 14.10 oz) phyllo dough sheets
– 500 gr (1.1 lbs) feta cheese
– 500 gr (1.1 lbs) curd cheese (quark cheese or ricotta cheese)
– 4 eggs
– 200 gr (7 oz) sour cream
– vegetable oil for brushing the sheets
Optional: salt to taste
How to make Cheese Burek (Börek)
Thaw the phyllo dough.Preheat the oven to 180ºC (356ºF).
Meanwhile prepare the filling.
Use a large bowl to combine feta cheese (grated or smashed), curd cheese and sour cream. If necessary, add salt to taste.
Add the eggs, slightly beaten, and stir to combine.
Divide the filling equally into 3 bowls, for 3 layers of filling. Set aside.
How to layer the Cheese Burek (Börek)
Divide the phyllo sheets in 4 parts (you should have about 3 sheets for each layer).
Place the 1st layer of phyllo dough into the slightly greased baking pan. Brush the sheets with vegetable oil.
Evenly spread on top the first bowl of filling.
Over the first layer of filling place the second layer of sheets and brush with vegetable oil.
Evenly spread the second bowl of filling.
Over the second layer of filling place the 3rd layer of sheets and brush with vegetable oil.
Evenly spread the 3rd bowl of filling.
Over the 3rd layer of filling place the 4th layer of sheets and brush with vegetable oil.
How to bake the cheese burek
Place the cheese Burek into the preheated oven and bake at 180ºC (356ºF) for about 40 minutes or until golden brown on top.
Remove from the oven and cover with a clean kitchen towel.
Cut into pieces and serve.
This cheese Burek goes great along with a Greek yogurt!
