Pork stew with spring onion and garlic – video recipe

Packed with flavor and absolutely delicious this pork stew with spring onion and garlic is one of my favorite dishes. The meat is so tender and so flavorful… You definitely have to give it a try!

This green onion and garlic stew is a Romanian Easter recipe. Traditionally it is made with lamb, green onion and green garlic. I don’t like lamb so I make this delicious stew with pork or chicken (turkey would work as well). I make this stew every spring, not only for Easter, because it’s absolutely delicious and easy to make using a few ingredients. The main ingredients are green onion and green garlic, ingredients that we can find in every market.

To make this delicious pork stew you should start by frying the meat on both sides until golden brown. Then chop the spring onion and garlic. Place chopped veggies into a large pot along with 2-3 tablespoons of vegetable oil and cook until tender. This will take only a few minutes. Then add water, tomato paste and fried meat and bake for about 45 minutes. 

But if you want a delicious vegan meal you can replace the meat with zucchini, eggplants or mushrooms.

You can serve this delicious pork stew with spring onion and garlic with a dollop of sour cream or Greek yogurt and with crusty bread.

– 700gr (1,5 lbs) lean pork chops

– 6 bunches spring onion

– 4 bunches spring garlic

– 4 tablespoons vegetable oil

– 3 tablespoons tomato paste

– salt to taste

– water – just enough to cover all the ingredients

How to make Pork stew with spring onion and garlic

Place the pork chops into a slightly greased non-stick skillet. Sprinkle some salt and fry on both sides until golden brown. Set aside.

Chop the spring onion and garlic.

Pour about 4 tablespoons of vegetable oil into a large pan. Heat the pan. Then add chopped spring onion and garlic. Cook, stirring occasionally, until soft.

Add the tomato paste and pour just enough water to cover all the ingredients. Season with salt and bring to a boil.

Remove from heat. Place the pork chops on top. Place the pan into the preheated oven and bake for about 30-45 minutes.

Serve warm with a dollop of sour cream and with crusty bread.
