Juicy and packed with flavor, this beef burrito makes the perfect choice for lunch or for dinner. It’s so satisfying and very easy to make with a handful of ingredients! 

But what is a traditional burrito? 

A burrito is a Mexican dish made of a flour tortilla filled with a savory filling, most often a meat such as chicken, beef, or pork. Along with the meat, burritos include cooked rice and beans, fresh veggies like lettuce and tomatoes and cheese.

Burritos are sometimes slightly grilled for a soft texture but also because grilling keeps the tight wrapping.

What goes in beef burritos?

The main ingredients are ground beef, flour tortillas and cheese. Rice and beans are very nourishing and they go great in burritos, so don’t skip them. You can also add dill pickles, tomatoes, lettuce, cabbage, red onion, corn or your favorite veggies.

How to freeze and reheat burritos

If you want to freeze your burritos, you should roll them into aluminum foil then place into an airtight container. To reheat the burritos, defrost in the fridge overnight then place into the oven in the foil

Dipping sauces for burritos

I love to serve my burritos topped with sour cream or Greek yogurt but my kids prefer ketchup. Anyway, you need a topping or a sauce to dip the burritos in because the filling is a little dry. You can also use my creamy mustard sauce or a restaurant style salsa.

Ingredients for beef burrito

– 6 flour tortillas 

For filling:

– 500 gr (1,1 lbs) minced beef
– 2 tablespoons vegetable oil
– 1 onion
– 2 tablespoons tomato paste
– 800 gr (28.2 oz) canned red beans
– salt, ground pepper and dried thyme to taste
– 1/2 cup rice
– 2-3 cups water
– 3-4 garlic cloves
– 1 bunch fresh parsley
– 250 gr (8.8 oz) grated cheese

For topping or dipping: Sour cream, Greek yogurt, salsa, creamy mustard sauce 

How to make beef burrito

Place vegetable oil and diced onion into a large skillet. Then place the skillet over medium heat and cook, stirring often, until glossy. Add the minced beef and stir to combine. Season with salt, ground pepper and dried thyme and continue to cook until the meat changes color. Add the tomato paste and stir to combine then continue to cook for a few more minutes. Then add the red beans, rinsed, rice and 2 cups of water. Continue to cook until the rice is cooked. If necessary, add more water. When the rice is almost done, add the crushed garlic. Turn off the heat and add fresh parsley. Stir to combine.

How to fill and fold the burritos

Place one flour tortilla onto a plate. Place in the middle some grated cheese. Then place about 3 tablespoons of beef mixture over the cheese. Top with a little more cheese. Fold the ends then the sides over the filling.
Repeat with the remaining tortillas.
Place one burrito into a skillet. Place the skillet over low-medium heat. Cook the burrito for 1-2 minutes on each side.
Serve warm with your favorite topping.
