To make the perfect sponge cake, you should respect a few rules:Use fresh ingredients, at room temperature
Use a kitchen scale to measure the ingredients.
Use a clean bowl and a clean mixer to beat the whites.
Beat very well the whites, until stiff peaks form
Don’t use the mixer when incorporating the flour
Don’t add baking powder. It’s not necessary. The cake will rise due to the well beaten whites.

What cheese works for Fanta cake?
Romanian sweet cheese is very similar to curd cheese or quark cheese. Ricotta cheese works too. If you want to use low fat cheese, you should add some gelatin.
The glaze is also pretty easy to make. Just combine Orange juice and cornstarch and cook until thickens

– 6 eggs (300 gr/ 10.58 oz without shells weight)
– 150 gr (3/4 cup) granulated sugar
– 110 gr (1 cup minus 2 tablespoons) flour (sifted)
– 40 gr (6 tablespoons) cocoa powder (sifted)
– a pinch of salt
– vanilla essence
– 500 gr (17.6 ounces) curd cheese or quark cheese
– 200 gr (7 ounces) sour cream (20% fat)
– 150 gr (5.2 ounces) vanilla powdered sugar
– 200 ml (1 cup minus 2 tablespoons) whipping cream
If you use sweetened whipping cream you can use less powdered sugar
– 1 L (4 cups and 3 tablespoons) fresh orange juice

Stir together flour and cocoa powder. Set aside.
Separate the egg yolks from whites. Place the whites into a large bowl.
Add a pinch of salt and mix until stiff peaks form.
Add the sugar in 2 or 3 steps and continue to mix until the sugar is completely dissolved.
To check if the sugar is completely dissolved put some foam between your thumb and your forefinger and you shouldn’t feel any sugar. You should obtain a very firm and glossy meringue.
Then add the vanilla extract and the egg yolks, one by one and briefly mix after each one to incorporate.
Fold in the flour and cocoa powder mixture.
Then transfer the prepared batter to the baking pan lined with parchment paper.
How to bake the sponge cake
Place the chocolate sponge cake into the preheated oven and bake at 180ºC (356º F) for about 15-20 minutes minutes. Make the toothpick test: prick the center of the cake with a toothpick. The toothpick must come out clean. If the toothpick comes out wet, you should bake the cake for a few more minutes.
Let cool completely
How to make the cheese cream
Place cheese and vanilla powdered sugar into a bowl. Mix until creamy. Then add the sour cream and mix to incorporate. Set aside.
Mix the whipping cream until fluffy.
Combine the whipped cream and the cheese cream.
Evenly spread the cream over the cake. Refrigerate while making the glaze.
How to make the glaze
Place cornstarch and sugar into a heatproof pan. Gradually pour in the orange juice and stir to combine.
Then place the pan over low heat and cook, stirring constantly, until thickens.
Let cool for a while, but not completely. The glaze should be fluid.
Remove the cake from the fridge. Pour the glaze over the cake.
Refrigerate for a few hours or overnight. So, you’ll have to wait a little 🙂
