The Snow Queen cake layers

The first layer is made of Angel food cake. It’s very fluffy and delicious and it calls for only a few ingredients.

Here are a tips for the best results:

For a fluffy and super light angel food cake it’s very important to mix the egg whites properly. 
You should mix the egg whites in 2 steps. First you mix the egg whites along with a pinch of salt until fluffy. Then add the sugar and continue to mix until the sugar is completely dissolved. You should obtain a firm and shiny meringue.
Also is very important to use clean instruments.
Making the cream for this cake it’s my favorite part. I have to make only one cream. then separate it in two bowls. I add dark chocolate to one bowl and the other one I leave it as it is.
The biscuit layer is made from plain biscuits soaked in a delicious milk syrup.
And the last layer is made from whipped cream and decorated with desiccated coconut.

For cake:
– 7 egg whites
– a pinch of salt
– 200 gr (1 cup) granulated sugar
– 75 ml (1/3 cup) vegetable oil
– 140 gr (1 cup and 2 tablespoons) flour
– 1 teaspoon baking powder

For cream:
– 7 egg yolks
– 1 L (4 cups and 2 tablespoons) milk
– 200 gr (1 cup) granulated sugar
– 150 gr (1 cup and 3 tablespoons) flour
– vanilla essence
– a pinch of salt
– 200 gr (1 3/4 stick) butter, softened to room temperature (150 gr/ 1 and 1/3 stick for the vanilla cream and the rest of it for the chocolate cream)
– 150 gr (5.29 ounces) dark chocolate

For the biscuit layer
– 150 gr (5.29 ounces) plain biscuits

For syrup:
– 100 ml (1/3 cup and 2 tablespoons) milk
– 4 tablespoons granulated sugar

For whipped cream layer
– 200 ml (1 cup minus 2 tablespoons) whipping cream
– desiccated coconut

How to make the Snow Queen cake

How to make the cream
Reserve a few tablespoons of cold milk and heat the rest of it. Place the egg yolks and the sugar into a heatproof pan and mix until creamy and pale. Add the flour and the cold milk alternately and mix. Add a pinch o salt
Then add the hot milk, gradually and mix to combine.
Place the pan over low-medium heat. Cook, stirring constantly, until thickened. The cream is ready when it starts to make bubbles.
Remove from heat and stir in the vanilla essence.
Divide the cream into 2 bowls. Add chocolate into one bowl; stir and let rest for a few minutes then stir to combine until the chocolate is evenly incorporated. Cover both bowls with cling film and let cool completely.

How to make the cake

Sift together flour and baking powder. Set aside.
Place the egg whites into a large bowl. Add a pinch of salt and mix until stiff peaks form. Add the sugar in 2-3 steps and continue to mix until the sugar is completely dissolved. You should obtain a firm and glossy meringue. Add the vegetable oil, then the vanilla essence and mix to combine. Using a spatula, fold in the flour. Transfer the batter to the baking pan lined with parchment paper. Evenly spread the batter then place the baking pan into the preheated oven. Bake at 180ºC (356ºF) for about 15 minutes.
Remove from the oven and make the toothpick test: insert the toothpick in the center of the cake. The toothpick should come out clean. If the toothpick comes out with wet batter, you should continue to bake for a few more minutes. Let the cake cool completely.

How to make the syrup

Place the milk and the sugar into a small heatproof pan. Place the pan over medium heat. Cook, stirring occasionally, until the sugar is completely melted. Remove from heat, add the vanilla essence and let cool

How to assemble the Snow Queen cake

Prepare the vanilla cream: add 150 gr ( 1 1/3 stick) soft butter into the white cream bowl. Mix until the butter is evenly incorporated.
Prepare the chocolate cream: Add the remaining butter into the dark cream bowl. Then mix until the butter is evenly incorporated
How to layer the cake
Step 1: Prick the cake with a fork then drizzle a few tablespoons of syrup
Step 2: Spoon the chocolate cream on top of the cake.

Evenly spread the chocolate cream over the cake
Step 3: Over the chocolate cream place a layer of biscuits soaked in syrup
Step 4: Spread the vanilla cream over the biscuit layer
Refrigerate while mixing the whipping cream
Step 5: Spread the whipped cream over the vanilla cream
Step 6: Sprinkle desiccated coconut on top
Refrigerate for at least 6 hours (over night it’s even better). Then slice and serve 💕
