These peach cookies look like real peaches and they are absolutely delicious! These homemade cookies are filled with cocoa buttercream, dipped in yellow and red milk syrup and coated with sugar. They are absolutely amazing!
I think these cookies are Italian, but they are very popular in Romania because they are budget friendly and yet so cute and delicious!
There is, though, a little disadvantage: you have to scoop the center of each cookie and this might take a while. But it totally worth the effort because these cookies are incredibly tender and tasty!
What we need to make peach cookies
The recipe calls for simple ingredients like flour, sugar, vegetable oil, butter, eggs, cocoa powder, baking powder, vanilla and rum essence, a little milk and food coloring
Most cookie recipes calls for butter, but in this case I recommend you to use vegetable oil. The cookies will hold their shape perfectly. Cookies made with vegetable oil are very hard but after soaking them into syrup they will be very soft. And yummy! 😋
I filled my peach cookies with cocoa buttercream but, if you prefer, you can use your favorite jam.
As regarding the food coloring, I recommend you to use gel food coloring.

– 400 gr (3 cups and 3 tablespoons) flour
– 150 gr (3/4 cup) granulated sugar
– 100 ml (1/3 cup 1 tablespoon and 1 teaspoon) vegetable oil
– 2 eggs
– vanilla essence
– 1/2 teaspoon baking powder
– a pinch of salt
– 120 gr (1 stick and 1/2 tablespoon) butter, softened to room temperature
– 120 gr (1 cup) powdered sugar
– 25 gr (3 1/2 tablespoons) cocoa powder
– 2 tablespoons milk
– rum essence
– reserved cookie crumbs
– 200 ml (1 cup minus 2 tablespoons) milk
– 120 gr (1/2 cup and 1 1/2 tablespoons) granulated sugar
– vanilla essence
– red and yellow food coloring (2-3 teaspoons of each)
You also need granulated sugar for decorating

How to make the dough
Stir together flour, baking powder and a pinch of salt. Set aside.Place the eggs into a large bowl. Add the sugar and mix until creamy. Then add the vanilla essence and vegetable oil and mix to combine. Add the flour and mix.
How to shape the cookies
Roll the cookie dough into equal small balls (18-20 gr| 0.63-0.7 oz each). I recommend you to weigh the first ball of dough then use it as a model.Tip: small cookies crack less on top. So, 18 gr| 0.63 oz would be the best size.
How to bake the peach cookies
Place the balls of dough onto the baking sheet lined with parchment paper. Gently press the tops to flatten the cookies. Place the baking pan into the preheated oven and bake at 180 C (356 F) for about 15-20 minutes or until the edges are slightly golden (cooking time depends on the cookie size). Remove from the oven, cover with a clean kitchen towel and let cool just enough to handle.Then use a sharp knife to make a hole in the bottom of each cookie. I also use a teaspoon to scoop the center. Reserve the crumbs.
How to make the cream
Place soft butter into a bowl and mix util creamy. Then add powdered sugar and mix. Add the cocoa powder and mix. Then add the rum essence and 2 tablespoons of milk and mix. Next add the reserved crumbs and mix. If the cream is too thick you can add a little more milk (1-2 tablespoons)
How to fill the peach cookies
Fill each cookie with cream then sandwich 2 filled cookies. Refrigerate while making the syrup.
How to make the syrup
Place the milk and the sugar into a small heatproof pan. Place the pan over medium heat and cook until the sugar is completely melted.. Remove from heat, add the vanilla essence and let cool.Next, divide the syrup into 2 bowls. Add yellow food coloring into one bowl and red food coloring into the other. Add food coloring until achieving the desired color.
How to decorate the peach cookies
Dip each sandwiched cookie into yellow syrup then into red syrup. Transfer to a platter and let drain for a few minutes. Then roll each cookie into granulated sugar.
