– 500 gr (17.6 oz) vegan plain biscuits
– 100 gr (3.5 oz or 3/4 cup) raisins
– 300 ml (1 1/4 cups) water
– 150 gr (5.3 oz) vegan dark chocolate (50% cocoa)
– 100 gr (1/2 cup) granulated sugar
– 3 -4 tablespoons cocoa powder
– vanilla/rum essence
– 2-3 tablespoons desiccated coconut

To soak the raisins:
– water (just enough to cover the raisins)
– rum or vanilla essence

How to make chocolate biscuit salami

First, you should soak the raisins. Place the raisins into s small bowl, pour just enough water to cover them and add your favorite essence. Cover and let sit while preparing the other ingredients.
Break the biscuits into small pieces. Set aside.

How to make the syrup

Place sugar and cocoa powder into a heatproof pan. Pour water and stir to combine. Place the pan over medium heat and cook until the sugar is completely melted.
Remove from heat and stir in the dark chocolate. Stir until the chocolate is completely melted. Then add the vanilla or rum essence.
Pour the syrup over the biscuits. Stir to combine. Then stir in the raisins, drained.

How to shape the biscuit salami

Transfer the mixture onto cling film. Roll up tight into the cling film, forming a salami.Refrigerate for 6-7 hours, over night is even better.
Remove from plastic wrap, sprinkle desiccated coconut and slice.
